Field and Forest to unveil next generation functional Chamomile extract at BIOFACH 2026

Field and Forest, a Nordic organic medicinal and aromatic plant cultivation leader and innovator, is bringing a new approach of functional ingredients to BIOFACH 2026. The company will launch a high-potency, upcycled chamomile (Matricaria chamomilla) extract specifically designed for the next generation of functional food and beverages.

Innovation based in circularity

Moving beyond traditional extraction, Field and Forest have developed a custom process that upcycles chamomile biomass. This "zero-waste" approach transforms the biomass of chamomile through a secondary production process into a premium, bioactive-rich ingredient.

The goal is to capture the full therapeutic spectrum of the plant while honoring commitment to the circular economy. At Biofach, the company is showing the industry that organic farming, sustainability and high-performance science go hand in hand.

Scientific approach for R&D departments

The new Chamomile extract - Calmomile is a standardized functional food ingredient. Key highlights for food scientists and product developers include:

  • Standardized bioactive composition:

the extract is standardized to key bioactives, including apigenin glycosides (min. 0.7 mg/g) and chlorogenic acid (min. 1.4 mg/g). These compounds support calming, anti-inflammatory, and antioxidant benefits.

  • Distinctive sensory profile:

Calmomile features a refined flavor profile with natural caramel, buttery, and sweet balsamic notes. This sophisticated matrix enables broader application in formulations, often reducing the need for additional flavoring agents.

  • Natural mineral enrichment:

beyond botanical actives, the extract serves as a natural source of essential minerals. It is particularly rich in potassium (min 34 mg/g) and phosphorus (min. 3 mg/ml), contributing to electrolyte balance and cellular function.

  • Additional wellness markers:

the extract contains herniarin, a traditional marker associated with smooth-muscle relaxation and digestive comfort, further enhancing its wellness positioning.

Optimized for Formulation & Purity

Field and Forest ensures that Calmomile meets the highest industrial standards for seamless integration:

  • Formulation friendly: with high solubility as a liquid concentrate (~60% Brix), it ensures integration without sedimentation.
  • Heart-healthy compliance: despite its mineral richness, it is very low in sodium chloride (0.028 g/100 mL), making it ideal for “Low Salt” or “No Added Salt” product claims.
Purity guaranteed: German chamomile used for the extract is cultivated on more than 500 hectares of the company’s own certified organic Nordic farmlands. Full traceability is ensured from field to extract, with quality and safety verified through laboratory testing, including rigorous heavy metal testing.

Designed for seamless integration, the extract is available in both liquid concentrate and powder forms. It is perfectly suited for:
